Zucchini Bread
1 c. sugar
1 c. brown sugar
1 c. salad oil
3 eggs, beaten
2 c. raw unpeeled squash
3 c. sifted flour
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
3 T. cinnamon
1/2 c. Chopped nuts
3 tsp. vanilla
Mix together sugars, oil, and eggs. Coarsely grate squash. Add to sugar mixture. Then add flour, soda, baking powder, salt, cinnamon, nut, and vanilla. Bake at 325 degree for 1 hour. Makes 2 large loaves.
I beat the first 4 ingredients well so the batter has lots of air in it. Then when I mix the rest, I only mix the batter until just mixed. I do not over mix.
The baking time might be a little longer than one hour. Check with a toothpick.
After you take it out of the oven, let it rest until the sides come away from the pan a little, then transfer to a cooling rack.
